Its Sunday morning again. It looks like its going to be a beautiful day. Its the Autumn Equinox today. Ive got lots of great music for you and a very tasty recipie for some delicious Moroccan Pot Pies. Yummy. Enjoy your Sunday Morning Coffee!!!
Moroccan Lamb Pot Pies
Ingredients:
1 Tablespoon of Olive Oil
1 Brown onion
500g Lamb Mince
1 Tablespoon Moroccan Seasoning\
2 cloves crushed garlic
400g tin crushed tomotaes
1 small eggplant
75g baby spinach
2 tablespoons sultanas
1 sheet frozen puff pastry, thawed
1 egg, lightly beaten
Method:
Preheat oven to 200C
Heat oil in a large frying pan on medium heat. Cook onion for mins, until softened. Add lamb and cook, stirring to break up any lumps, for 5 mins or until browned. Add seasoning mix and garlic and cook for 1 min, until freagrant. Add tomotoes, 1 cup of water and eggplant. Simmer for 5 mins, until thickened slightly. Remove from heat. Stir through spinich and sultanas.
Spoon lamb mixture into four overnproof remekins. Cut pastry into 4 equal squares.Place on top of mince, scrunching edges of pastry around ramekin. Brush with a little egg. Bake for 10-15 mins. until puffed and golden.
I like to serve these with mashed potato and peas. Perfect with a pie!!!
